Ingredients:.
For kabab:.
1/2 kg Beef,mutton or chicken mince (fat free)
1 tbsp ginger garlic paste
1 onion paste without juice
chopped coriander
2-3 green chilli paste
1 tsp salt or per taste
1 tsp red chilli powder
1 tbsp coriander powder
1 tsp garam masalah (all spice)
1 tbsp meat tenderizer or papaya paste optional
* in mortar or food processor paste the onion and squeeze to remove all water
For Curry:.
2 onion sliced
4-5 large tomatoes thinly cubes
3-4 green chillies
1 tsp ginger garlic paste
1 tsp salt or per taste
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
oil per your requirement
*coal; to give it a traditional smoky flavor
METHOD:.
- In foor processor or large mixing bowl add mince, onion paste, green chili paste, ginger garlic paste, chopped coriander leaves, salt, coriander powder, chili powder and garam masala
- Mix all the ingredients with and leave aside
- In pot add oil for cooking and slice the onion
- Fry them until pink in color now add ginger garlic paste and fry for 3-4 min.
- Add tomato cubes, salt, red chili, coriander powder, turmeric powder and cook on medium to high heat until very little water remains
- Make kabobs by taking small portion of mince in hand and roll it to form kabob shape
- Slowly put all kabobs in gravy one by one, do not overlap put them separately
- Shake the pot slowly to bathe all the kabobs in gravy juice
- Cook them for few minutes and when color starts to change shake the pot to turn them
- Now cover the lid and let them cook on slowest heat
- After few minutes shake the pot again to mix the kabobs with juices but do not use spoon as it might break kabobs
- Take a piece of coal and blow it on fire
- Put a small piece of onion or aluminum foil in center of pot
- Place the coal over it and pour 2 tbsp of oil over burning coal and immediately cover the lid
- Leave it until you serve the dish
- Remove the coal add chopped coriander and few green chilies and mix the gravy and serve it
- Serve it with Naan (Pakistani bread) and zeera chatni (yogurt and cumin sauce)
